HOT AND COLD PEARS IN BROUILLY
1/2 a stick of cinnamon?
1 bottle of Brouilly
Vanilla ice-cream (1 scoop per plate)?
5 chicks of orange per plate, optional
- Peel and slice the pears. Cook them in the Brouilly with the cloves, cinnamon and sugar. Take out the pears, reduce the sauce by half then thicken with the butter.
- Present on plates with the vanilla ice cream and pour the sauce over the pears. Decorate with orange and candied peel, optional.
