HOT AND COLD PEARS IN BROUILLY


Ingredients

4 pears?
1/2 a stick of cinnamon?
1 bottle of Brouilly
Butter
Vanilla ice-cream (1 scoop per plate)?
2 cloves?
5 chicks of orange per plate, optional

Instructions

  1. Peel and slice the pears. Cook them in the Brouilly with the cloves, cinnamon and sugar. Take out the pears, reduce the sauce by half then thicken with the butter.
  2. Present on plates with the vanilla ice cream and pour the sauce over the pears. Decorate with orange and candied peel, optional.
