GRILLED PRIME RIB AU FLEURIE


Ingredients

4 chopped shallots
1.5 cups Fleurie of your choice
1.2 cups butter

Instructions

  1. Preheat grill.
  2. Remove meat from refrigerator to bring to room temperature.
  3. Place meat on hot grill and cook until well browned on both sides – about 5 minutes on first side and 3 minutes on second.
  4. Procedure: Fleurie sauce
  5. Cover bottom of medium saucepan in beef stock, simmer on stovetop
  6. Add 4 chopped shallots and fry
  7. Add 1.5 cups of Fleurie of your choice, reduce
  8. Add 0.5 cups of butter
  9. Lay prime rib in pan with sauce, flip
  10. Finishing cooking until done to your preference
  11. Plate prime rib and add sauce to taste
  12. Serve with remaining Fleurie (chilled!)
